1 small onion, diced
3 T. olive oil
2 T. minced garlic
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. oregano
1 tsp.
Italian seasoning
1 tsp. crushed red pepper
1 tsp. basil
4 lbs. P.E.I. Mussels
1/2 bottle white wine
Fresh Italian parsley
1 stick of butter

Directions:
Directions:
In deep skillet combine oil, onion, salt and pepper in medium/low heat. Cook until onions are brown. Add washed mussels to pan. Add in wine and sprinkle with the oregano, Italian seasoning, crushed red pepper, and basil. Add stick of butter to top of mussels. Sprinkle 1/2 bunch Italian parsley.

Mussels with Pasta

1 14.5 oz. can fire roasted diced tomatoes
1 28 oz. can of whole peeled San Marzano puree (comes in a 24 oz. bottle)
1 lb. pasta

Remove mussels from broth and keep broth in the pan. Shell the mussels. Add the fire roasted tomatoes to broth. Add whole tomatoes to pan while hand squeezing tomatoes before adding to pan. Add pasta; cook about 2 minutes uncovered. Add mussels back into broth with tomatoes. Increase eat to medium/high until pasta is cooked. Simmer and stir often.

Serve with garlic toast points if desired.
