1/2 cup of pecan nuts or walnuts
2 tbsp of unsalted butter
3 tbsp of heavy cream
1 heaped tbsp of sweetener like erythritol
1/2 tsp of vanilla
a pinch of salt

Directions:
Directions:
Lightly roast the nuts in the oven. Add the butter, cream and sweetener to a small pan. Stir over medium heat until the sweetener is dissolved and the color starts to darken. Add the vanilla and keep stirring until the caramel is dark brown. Remove from the heat and add the salt and nuts. Coat the nuts thoroughly with the sauce. Place the nuts on parchment paper and place in the refrigerator for about half an hour.

TIPS:
1. Keep an eye on your nuts in the oven and don't overcook them.
2. You want your sauce dark, but not burnt.
3. Keep the temperature low and continue to stir
4. If you take he sauce off the heat too early, it will still taste great, but won't stick well to the nuts and may be a little runny.
