1/4 Cup sliced almonds, opt.
1 & 1/4 cup sugar
1 lg egg
2/3 cup whole milk
1 &1/2 tsp. almond extract
1 & 1/4 cup flour
1/2 tsp. baking powder
1/4 tsp. salt, opt.
1/2 cup butter- melted and cooled slightly.

if desired, garnish with whipped cream and pitted cherries

Preheat oven to 350º.

In medium bowl, beat (on medium speed) the sugar, egg, milk, and extract until smooth, scraping down sides as needed. Mix flour, baking powder and salt and mix into the wet ingredients. Beat in melted butter until just combined.
Spray a quiche pan, 9-inch cake pan, or Scandinavian almond cake pan with a floured cooking spray (like Bakers Joy). Sprinkle almonds into pan. Immediately pour batter into prepared pan and bake 40-50 minutes until edges are golden and toothpick inserted in center comes out clean. Cool completely on a wire rack. To serve, loosen edges with a knife and place upside down on serving platter to unmold from pan.Or if in a round pan, cut in wedges to serve. Can be wrapped well and stored for up to 3 days or freeze. Great all by itself or serve with whipped cream and sliced fresh pitted cherries.
