1 c Shortening (like Crisco)
3/4 c Sugar
2 Eggs
2 1/2 c Flour
1 c Cooked carrots (mashed)
1 tsp Vanilla
1 tsp Lemon juice ( I prefer Real Lemon)
1 tsp Salt
2 tsp Baking powder


Icing:

1/2 Package of powdered sugar
1 Small can of frozen orange juice ( I prefer Minute Maid) DO NOT THAW!
Orange peel (optional)

Cookies:

Preheat oven to 350º.

In a mixer, on medium speed, slowly combine all ingredients. Continue mixing until dough forms.

On cookie sheet, lined with wax paper, drop spoonfuls of dough onto cookie sheet.

Bake for 10 minutes. Move cookies from sheet to cooling rack to cool (can also lay wax paper on counter and cool cookies there)

**Ice cookies (recipe follows)


Icing:

DO NOT THAW ORANGE JUICE!

In a bowl, slowly add small spoonfuls of orange juice to sugar. Mix until you reach a spreadable consistency.

Store in air tight container in refrigerator.

**I have found that it is easier to ice the cookies by taking them, when they are cool, and dipping the tops of the cookies in the icing. Then set them aside on wax paper to let icing dry. It coats them more evenly.
