Ingredients: 4 Chicken Breasts Salt and Pepper to taste 12 Thin or 4 thick Slices Deli Ham 8 Slices Swiss Cheese (or about 8oz) 1/2 Cup Flour 1/2 Tsp Onion Powder 1/2 Tsp Garlic Powder 2 Eggs 2 Cups Panko Crumbs 3 Tbsp Vegetable Oil
Dijon Cream Sauce 2 Tbsp Butter 2 Tbsp Flour 2 Cups whole Milk or Whipping cream 2 Tbsp Dijon Mustard 1/2 cup Swiss Cheese, shredded or Parmesan Fresh Chopped Parsley for garnish, optional

Directions:Slice chicken in half horizontally careful not to cut all the way through. Place in between 2 sheets of plastic wrap. Pound with mallet until about 1/2" thick. Remove wrap and season with salt and pepper. Place 4 pieces of ham on each chicken breast and then cover with slices of swiss cheese. Slowly roll up chicken. Place in plastic wrap and refridgerate 30 minutes to help them hold shape. Or you can tie with twine. In separate bowl place flour and seasonings. Stir. In a second bowl place panko. In a third bowl beat eggs. Preheat air fryer to 365º. Remove plastic from chicken and dredge in flour, coat in egg and then coat in panko. Brush oil onto chicken. (or you can spray well with cooking spray). Place in air fryer and cook for 25-30 minutes or until internal temp is 165 degrees. While chicken is cooking, make sauce: Melt butter in saucepan. Whick in flour, slowly add milk/cream. cook over medium heat until mixture begins to thicken. Stir in mustard and cheese. Serve over chicken. Garnish with parsley if using. |
