Baked Panko Chicken Tenders Recipe

500 grams boneless chicken tenders
1 1/2 cups panko bread crumbs
1/4 cup parmesan cheese (optional)
oil spray for the panko bread crumbs (Pam, olive oil spray, avocado spray)

Batter
1 egg
1 Tbsp mayonaise
2 Tbsp dijon mustard
1/4 tsp paprika
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp salt
1/8 tsp ground pepper

Directions:
Directions:
Pre heat oven to 190 º celsius
spread panko bread crumbs on baking sheet and give a quick spray with the oil. Bake 3-5 min until they begin to turn golden brown.
Line another baking sheet with Silpat (silicone pad) or parchment paper (or use the same baking sheet after removing the bread crumbs - less clean up).
Remove bread crumbs from baking sheet and put in bowl, add optional parmesan cheese if desired
Whisk together all the batter ingredients, add chicken to coat
With tongs (or I use non latex gloves), pick up each chicken tender, roll it in the panko bread crumbs and then put it on the cookie sheet. Repeat until all chicken tenders have been covered in Panko bread crumbs.
Put Chicken tenders in oven, depending on size I recommend cooking of 9 minutes and then flipping them and cooking for another 8-9 minutes.
