Chicken (3 breasts)
chicken bouillon
garlic powder
onion powder
cumin
onion
butter
flour tortillas
1 block cream cheese
salsa (any kind of red salsa, mild medium or hot)
cheddar cheese

Directions:
Directions:
Cut chicken breasts into large pieces, boil it in water with chicken bouillon
garlic powder, onion powder, cumin (I measure with my heart but you could do like 1 T each)
Once cooked through take it out of the water and place it in a bowl, then use a hand mixer to shred the chicken.
Saute diced onion in 1-2 T butter
Add shredded chicken
Add 1/2 T each of garlic powder, onion powder, cumin
Combine then add cubes of cream cheese, continue to mix until cream cheese is melted adding about 1 C of salsa and you mix, then add a handful of cheddar cheese.
Place 1/2-3/4 C mixture into flor tortilla and roll up, place each tortilla in a greased 9x11 pan, I usually add about 1/2 cup of salsa to the bottom of the pan. Once all tortilla are rolled up, add additional salsa onto enchiladas then top with cheese, cover with foil and cook 45 minutes, remove foil and cook another 10 min until top starts to brown.
