Ingredients:  
1. ¼ cup butter
2. ¼ cup flour
3. ¼ tsp salt
4. 1½ cup milk
5. 1 tsp Dijon mustard
6. 2 cups swiss cheese, shredded
7. 4 eggs, separated

Directions:
Directions:
1. In saucepan melt butter; blend in flour and salt.
2. Stir in milk. Cook and stir over medium heat until mixture is smooth and thickened. Remove from heat.
3. Add mustard and cheese. Stir until cheese is melted.
4. Beat in egg yolks one at a time.
5. In separate bowl, beat egg whites until stiff. Fold into cheese mixture.
6. Bake at 375º for 30-40 minutes until firm and well browned.
