2 Cornish hens
2 Tbsp olive oil
1 lemon, cut into quarters
4 garlic cloves
4 - 8 sprigs fresh thyme
1 Tbsp kosher salt
1 Tbsp pepper

Directions:
Directions:
Rinse the hens and discard any innards that may have been included in the cavity.
Pat dry with paper towels and place on a greased baking sheet.
Coat the hens liberally with the olive oil.
Season inside and out with the salt and pepper.
Divide the lemon, garlic, and herbs between the two birds, stuffing them into the cavities.
Tuck the wing tips under the back of the hens to prevent them from burning.
Roast at 350º for 40 minutes, until the skin is golden crisp and the juices run clear.
The meat is done with the internal temperature reaches 165º on a meat thermometer.
Remove from oven, cover loosely with foil, and rest for 10 minutes.
Discard the lemons and garlic from the cavities prior to serving.
