1 1/2 pounds pork tenderlion diced bite size pieces
2 tablespoons sesame oil
2 tablespoons vegetable oil
4 cups of cooked rice
3 tablespoons soy sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup frozen peas and carrots blend
3 large eggs beaten
1 1/2 pounds sliced green onions

Directions:
Directions:
In a large skillet saute sliced pork in sesame oil and vegetable oil on medium heat until pork is cooked through approximately 4-6 minutes. Transfer to separate plate.
Next add peas and carrots to the pan saute for approximately 2 minutes on medium high heat.
Slide the vegetables to one side and pour eggs into the pan on one side.
scramble the eggs.
Then add pork back into pan.
Next add rice, soy sauce, salt, and pepper to the pan
Stir for a few minutes until rice is heated through and slightly brown.
Top with sliced green onions and serve immediately.
