1 lb black beans
10 cups water
1 large hot pepper

2/3 olive oil
1 large onion
4 garlic cloves
1 large hot pepper
4 teaspoons salt
¼ teaspoon oregano
1 teasppon cumin
½ teaspoon pepper
2 teasppons brown sugar
1 bay leaf

2 tablspoons vinegar
2 tablespoons white wine
2 tablespoons olive oil

Directions:
Wash beans and let them soak in water and hot pepper. Leave soak overnight. Let the mixture simmer in same water for 45 minutes. Heat oil in pan and sautee finely diced onions ,pepper, and garlic. Throw a cup of beans in the mixture. Add salt ,pepper , oregano , bay leaf, and sugar. Let simmer for an hour. Add the vinegar and white wine. Simmer one more hour. Before serving , add 2 tablespoons of olive oil . Serve with rice. Serves 8.
