Tuna
Arugula
Cilantro Rice
Avocado
Black Beans
Corn Salsa
Serrano Crema
Cilantro Chili Dressing
Pickled Red Onions

Serrano Crema
1/2 bunch cilantro
3 serrano chili peppers, seeded and chopped
3 cloves garlic
1 cup mayo
1 cup heavy cream
salt and pepper to taste

Cilantro Chili Dressing

1/4 cup vegetable oil
2 tbsp. rice vinegar
1 tblsp lime juice
1 tsp sesame seed oil
1 tsp sriracha
soy sauce
fresh cilantro
sesame seeds toasted

Corn Salsa

Three ears of corn, roasted and cut from cob
2 jalapenos, seeded and chopped
1 cup cilantro, finely chopped
1/4 cup onion, chopped
cumin
sea salt
chili powder



Directions:
Directions:
Assemble dressing, salsa, belnd crema, and then sear tuna. Cook rice according to directions and assemble in a bowl and serve.

While in Kansas City, we went to the Cactus Grill. Although their are two sites, it isn't a chain. I ordered this Tuna Bowl, and Tim ordered a shrimp recipe. We were both blown away. I have searched for a copycat recipe, but couldn't rind one, so this is my best impersonation of an amazingly flavorful meal.
