* ¼ cup dark brown sugar
* 1 Tbsp coarse sea salt
* 2 Tsp cracked black pepper
* 2 Tsp smoked paprika (hot or mild, whichever you prefer)
* 2 Tsp garlic powder
* 2 Tsp onion powder
* 1 Tsp ground mustard
* ½ Tsp cayenne pepper

- Rub the Roast liberally with the rub of your choice,

- leave to let the flavors set for 1 hour on the counter before cooking (you want the meat to start to come to room temp)

- If the rub is not sticking, use a binder such as Mustard or Worcestershire sauce first, then add your dry rub and let sit

- Set the Oven to 450F, place the roast in the oven, preferable on a rack with a drip tray to allow all sides of the roast to build up a crust.

- Cook for 20-25min

- Turn down the oven to 350F and cook for another 20-25min per pound, the roast should come up to 160-165F

- The crust will help retain the moisture in the meat

- Pull your roast and tent with aluminum foil for 5-10 min
