1 Rack Ribs (cut in half)
1/3 cup Mustard
1-2 Tbsp favorite seasoning
1 can of either cherry cola or root beer

Sauce
1/4 cup Ketchup
2 tsp Worcestershire sauce
1 tsp liquid smoke
Liquids from the rib boats

- Remove the membrane from the ribs and heat smoker to 180°C.

- Coat both sides of the ribs with the mustard

- Sprinkle seasoning onto both sides of the ribs and let the seasoning bind/rest

- Place ribs on smoker rib, side up and smoke for three hours

- Create foil boats for the ribs and place in boats, meet side down and add soda

- Place sealed boats back onto the smoker cooking for two hours at 220°C

- Carefully remove boats from smoker and poor juices into a pot, adding the ketchup, Worcestershire sauce, and liquid smoke

- While reducing sauce place ribs back on smoker at 220°C meet side up for 1 hour

- Periodically mop sauce onto ribs for final hour of cook

- When to your liking remove ribs and let set for 15 minutes

**Soda can be replaced with bourbon

The membrane on a rack of ribs is tough and holds in excess fat. To remove the membrane, lay the rack meaty-side down. Use the tip of a small knife to gently cut under the membrane on one corner. Lift the corner of the membrane and gently pull it away from the bones.
