1 cup Margarita Mix
5 limes
1 tbsp unflavored gelatin
1/2 cup water
1/2 cup tequila
all natural green food coloring
flaky sea salt

Directions:
Working over a bowl or sink, use a melon baller to scoop out the lime insides. Start by working it in between the white pith and green flesh, and scoop/scrape the sides until the lime is clean. Many times it will tear right out once you get it going. Try and get all the white part out, as this will make the shots bitter. Rinse limes afterwards, to remove any residual juice. Whisk gelatin and room temp water in a microwave safe bowl or measuring cup until there are no lumps. Then microwave until mixture begins to bubble, about 45 seconds or more. Watch closely so it doesn’t boil over. Whisk gelatin and remaining ingredients in a pitcher or measuring cup and pour into limes. Let set in refrigerator overnight. Remove and garnish with flaky sea salt.
