2 cans chickpeas (garbanzo beans)
olive oil 2-3 Tbsp
Tahini 2-3 Tbsp or more to taste
Juice of 1 or 2 lemons
1 1/2 garlic cloves mashed to a paste
Salt to taste ( start with 1tsp)

Drain and rinse chickpeas.
Hull every single chickpea and discard the skin. Yes you read correctly. The skin comes off easily. It's a gentle pinch action. Consider it a meditative exercise.

Once all those pesky skins are gone, add the chickpeas to a food processor or blender. Add the lemon, tahini, olive oil salt and garlic. Blend until creamy smooth. If it is too think, add more tahini.
