Lime Filling
4 tsp grated lime zest
1/2 C lime juice
4 egg yolks
14 oz sweetened condensed milk
Graham Cracker Crust
1 1/4 C graham cracker crumbs
3 Tbs sugar
5 Tbs unsalted butter, melted
Whipped Cream Topping
3/4 C heavy cream
1/4 C powdered sugar

In medium bowl, whisk together zest and yolks until tinted light green, about 2 minutes. Beat in milk, then juice. Set aside.

Preheat oven to 325º. In medium bowl, mix together crumbs and sugar. Add butter. Press into 9-inch pie pan. Bake 15 minutes until lightly browned. Transfer to wire. Cool to room temp.

Pour lime filling into crust. Bake 15-17 minutes until center is set but jiggly. Transfer to wire rack. Cool to room temp. Refrigerate until well chilled, at least 3 hours.

In medium bowl, whip cream to very soft peaks. Add powdered sugar 1 tablespoon at a time, continue whipping to just-stiff peaks. Spread evenly over pie.
