1 c rice
2 c water
1 can evaporated milk
4 c milk
2 eggs
½ c sugar (or more to taste)
Vanilla and cinnamon

Directions:
Directions:
In dutch oven or similar sized pot, boil rice in 2 c water for 10 - 12 minutes.
Add evaporated milk and regular milk and bring to boil again.
In a bowl gently beat eggs with the sugar. Pour about 1 cup hot milk mixture into egg mixture to temper the eggs, then immediately pour everything back into the large pot and once more bring to a boil, stirring constantly! Remove from heat and add vanilla. May be served warm but most of the time it is served cold. Serve with cinnamon so each may help themselves.

I enjoy raisins so I take every chance to use them. The best time to add about a cup is just before you add the milk.
