Make pie crust (see Bea's pie crust recipe)

Lemon Filling:

3/4 cup sugar
2 Tbs. cornstarch
dash salt
3/4 cup cold water
2 slightly beaten egg yolks
1 tsp. grated lemon peel
3 Tbs. lemon juice
1 Tbs. butter or margarine

Meringue (see Bea's meringue recipe)

Directions:
Make pie crust and place into pie plate. Cut several small slits in crust for breathing. Bake until golden brown.

In a saucepan combine sugar, cornstarch and salt. Gradually add water. Stir in egg yolks, lemon peel, and juice. Cook and stir over medium heat until thickened and bubbly. Boil 1 minute; remove from heat. Stir in butter. Cool to room temperature with stirring. Makes 1-1/3 cups. Place in baked pie crust.

Make meringue. Put meringue all over lemon filling, edge to edge. Bake in oven until meringue is golden brown.
