18 oz. frozen spinach
⅓ c. reserved spinach liquid
3 Tbsp. butter or olive oil
¾ c. finely diced onion
¼ c. flour
1 c. milk (add more if it seems too thick)
1½ tsp. Worcestershire sauce
1 tsp. garlic salt
¾ tsp. celery salt
1 tsp. black pepper
Red pepper flakes, to taste
1½ c. grated Pepper Jack cheese, divided

Preheat oven to 425 degrees F. Butter a 1 qt. baking dish; set aside.

Cook the spinach according to package directions. Drain, saving juices in bowl under colander.

Make a roux by melting butter/olive oil in a sauté pan over medium heat. Add the finely diced onion and sauté until softened (about 4 min.). Sprinkle the flour over the onions and butter and stir. Cook until flour is browned (about 8 min.). Lower heat to medium-low or low. Gradually whisk in milk and 1/3 c. reserved spinach juice. Continually whisk until the sauce thickens. Cook until sauce comes to a very low simmer.

Stir Worcestershire sauce and spices into the sauce. Add drained spinach and 1 c. of Pepper Jack cheese.

Transfer mixture to the buttered casserole dish and top it with the remaining ½ c. of cheese. Bake at 425 for 20 min. until it is lightly bubbling and cheese is melted and golden brown. Serve warm with thicker tortilla chips, pita chips, or bread.
