5 medium zucchini, sliced
1 medium onion, sliced
3-4 tomatoes, peeled and puréed
2 Tb. olive oil
1 ½ tsp. salt

Directions:
Peel zucchini. Slice onions and zucchini (separately).

Heat olive oil in pan. Sauté onions until lightly browned.

Add zucchini to pan. Cover and steam for about 20 min.

Add puréed tomatoes and season. Simmer for another 30-35 min.

Can be served hot or cold.
