"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
2 1/2 tablespoons yeast
4 tablespoons sugar
2 cups warm water
2 teaspoons salt
1 can evaporated milk
2 eggs
3 squares of melted butter
7 cups (approximately) flour

Directions:
Directions:
Add warm water, yeast and sugar into mixing bowl. Let set until good and foamy.

When foamy, mix salt, evaporated milk, eggs, and 1 square of butter into the mixing bowl. (I prefer a large kitchen aid mixer but can also be done by hand)

Slowly mix flour until the dough pulls away from the sides of the bowl. You may need to add a little bit more flour if it's still too sticky.

Cover and let rise until it doubles in size.

Add square of melted butter to 2 large cookie sheets. Knead the dough and form dough into a palm size balls. Place in pan for space to grow. Each pan should have about 24 rolls depending on size.

Let rolls rise about 20 minutes and bake in preheated oven at 400º for 20 minutes.
