Ingredients:  
Makes one 6" chaftilla (tortilla)

1 large egg
1/4 cup shredded cheddar or mozzarella cheese - diced fine
4 t. pork panko (ground fried pork skins)
pinch of salt

1. Mix all ingredients welll and pour into a buttered 8" nonstick frying pan.
2. Cook on low until the top looks set.
3. Then flip and cook the other side.
4. Keep flipping until they reach a light golden brown.
5. When done put on a cooling rack.

Very simple and great for tacos, burgers or sandwiches. Play with ingredients for different flavors. Kinda like a Gordita shell.
