Ingredients: 1 and 1/2 cups gluten free flour 1 and 1/2 tea xanthum gum 1 tea baking soda 1/2 tea kosher salt 1/2 cup coconut sugar 2 and 1/2 cups Gluten Free Oats 3/4 cup coconut sugar 10 tbl softened butter (at room temp) 2 eggs at room temperature. 1 tea vanilla 1 cup unsweetened or coconut sweetened chocolate chips.

Directions:Heat oven to 350º Line your baking pans.
In a large bowl measure out your flour, xanthum gum, baking soda and salt. Whisk to combine. Add in sugar and oats. Whisk to combine. Add in the next set of sugar. Whisk to combine. Add in the butter and stir in till well blended. Add in the eggs and vanila. Stir till well blended. Stir in the chocolate chips.
Please dough in the fridge for about 1/2 hour. Then use an ice cream scoop and scoop little balls to trays and then pop into the oven. When the top of the cookie becomes firm then they are done. Pull them out of the oven. If they arent done then they will poke in like a soft pillow when you poke them. As soon as they are firm pull them out. Dont leave them in till they are browned or they will become overcooked. |

Notes: This cookie has quickly become our favorite cookie. Its not overly sweet and you feel good after you eat it. We have added in dried cranberries as well and they are quite good also.
