150 ml hot black tea
3/4 cup molasses(I used blackstrap)
1/3 cup coconut sugar
1 cup tart dried cherries
2 large eggs beaten
2 cups gluten free flour
1 tsp baking powder
1/2 tsp baking soda

Directions:
Directions:
Heat oven to 300º F
grease and line a bread pan

Measure molasses, coconut sugar and tart cherries into bowl and stir together. Pour hot tea in and stir till blended. Then add in the beaten eggs. Stir in till well blended.

Then add in the flour and baking powder and baking soda. Blend till well blended. Grease and line pan with parchment paper.
Pour into bread pan.

Bake at 300º for 50 minutes until well risen and firm. Make sure that stick comes out clean in center.

When you pull it out of the oven paint on some more molasses till the top is shiny.

Let cool on rack.

After cooled wrap tight in air tight container.

Eat with butter. So good!!!

I was watching the Great British Baking Show and they featured Malt Bread. An old favorite in the UK. It looked beautiful when they made it so I found the recipe and opted to switch it to gluten free, molasses instead of malt and dried tart cherries instead of raisens because of my diet restrictions. It is a delicious bread and I discovered molasses is actually an anti oxidant for arthritis!!! Whoopee!!
