3 eggs
1 c oil
2 c sugar
2 c zucchini (grated and peeled)
1- 8 oz can of crushed pineapple
3 tsp vanilla

3 c flour
1 tsp salt
1 tsp soda
3 tsp cinnamon
¼ tsp baking powder

½ c chopped nuts

Directions:

Grease your loaf pans.

Cream eggs, oil and sugar together. Add the next three ingredients.
Mix all the dry ingredients together, then add it to the first ingredients. Blend well.

Bake at 325º. Cook for one hour or until done. Insert a toothpick to check if it's done.

Makes 2 loaves ( pans are 8½ x 4½)
