1 LB Boneless chicken breast (1" Cubed)
8 Medium white potatoes
½ Cup oil
2 tsp Kosher salt
Black pepper
1 TBSP Paprika
2 TBSP Garlic powder

TOPPING:

2 Cups cheese (Shredded)
½ LB Bacon (Half pack)
½ Cup green onion
Sour cream (dollop on top)
Diced tomatoes

Directions:
Directions:
1. Preheat oven to 400ºF.

2. In large bowl combine oil, salt, pepper, paprika and garlic powder.

3. Add potatoes and chicken and coat evenly.

4. Place potatoes in large pan and bake until crispy and brown (45-55 minutes).

5. Fry up bacon and crumble.

6. When potatoes are done, top with cheese and return to oven.

7. Crumble bacon, sprinkle green onion and diced tomatoes.

8. Serve with sour cream.
