1 lbs raisins
1 lbs currants
1 lbs dates
1/4 lbs peel
1 cup cherries
1 cup chopped nuts
1/2 cup brown sugar
3 eggs
1 lbs butter
2 tsp vanilla
1 tsp baking soda
2 tsp maple flavouring
2 tsp almond flavouring
2 tsp lemon
2 1/2 cup all-purpose flour
1 tsp allspice
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp ginger
1/2 cup warm water

Directions:

Let butter come to room temperature and cut into cubes.
Put raisins, currants, and date in 2 cups of hot water for 10 to 15 minutes. Drain.
In a large bowl, add butter and brown sugar to the date mixture. Stir and let cool.
Whisk eggs lightly, add to the mixture, and stir.
Now add the rest of the fruit (peel, etc), nuts (optional), and flavorings. Mix well.
Add all dry ingredients (spices, flour, etc). Mix well with a wooden spoon and add up to 1/2 cups of warm water so the whole mixture can gradually pour (mixture should barely run) into an angel food cake pan (tube in the middle). Bake 250º to 275º for approximately 3 hours, until a skewer can be inserted into the cake and come out dry.
