1 lb. ground meat
3 medium eggplants
3 tbsp. cooking oil
½ cup diced celery
½ cup diced bell pepper
3 cloves garlic
½ cup diced onions
1 cup cream of mushroom soup
¼ cup green onions, and parsley

Directions:
Directions:
Slice eggplants in half and cook in salted boiling water until tender. Drain and scoop out insides. Cook meat in oil, add celery, bell pepper, onions, and garlic. Cook until the meat is brown, add eggplant scoops and soup, simmer and reduce liquid. Add parsley and green onions to mixture then fill eggplant shells top with cracker crumbs and bake at 325° for about 30 minutes.
