1 Lb Lean ground beef
1 650ml jar of pasta sauce
1 796ml jar of diced Italian spiced tomato's
1 Carrot
3 Cloves garlic
⅓ White onion
Less fat reduced cheese
500g reduced fat cottage cheese
12 Lasagna noodles

OPTIONAL:

¾ Cup sausage
Can also add a drizzle of chicken stock to bake

Directions:
Directions:
Preheat oven to 375ºF

1. Brown ground beef and drain. Add diced onion, grated carrot and crushed/diced garlic to ground beef and saute.

2. Add spices; salt, pepper, Italian seasoning and oregano.

3. Add pasta sauce and diced tomato's and bring to a boil 5-7 minutes.

4. Cook 12 Lasagna noodles for 9 minutes or to packaged instructions. DO NOT OVERCOOK PASTA! It is meant to be assembled half cooked.

5. Lay 4 noodles in a large glass baking pan (4.5L). Add half of the cottage cheese, beef mixture then add 4 more noodles, the rest of cottage cheese, and another layer of beef mixture.

6. Add final four noodles, rest of the beef mixture and a thin layer of grated cheese. (This protects the noodles from drying out).

7. Bake for 60 minutes @ 375ºF

8. Add more graded cheese about a minute before done.

9. Garnish with parsley and serve.
