2 3/4 cup flour
2 cup sugar
2 tsp cinnamon
1 1/2 cup vegetable oil
1 cup crushed pineapple
4 eggs
2 tsp baking powder
2 tsp baking soda
1 tsp vanilla
8 carrots shredded

Frosting
2 8 oz packages of cream chese
1 1/4 stick unsalted butter
2 tbsp sour cream
3 cup confectionary sugar

Directions:
Directions:
Mix dry ingredients, add wet ingredients and fold in carrots
Fits into 2 round pans or one spring form pan
Bake 350 FOR 50-60 MINUTES

Cool cake and frost with cream cheese icing
