1 1/2 lbs cherries
1 1/2 C whole milk
2 C heavy whipping cream
6 egg yolks
1 1/4 C sugar
1 tsp lemon juice
1 tsp vanilla
3/4 C chocolate chips or chunks
pinch salt

Directions:
Pit cherries. Add 1 pound of cherries to small saucepan and add 1/4 cup sugar. Let sit for 30 minutes to macerate. Roughly chop remaining 1/2 pound of cherries, set aside. Prepare ice bath by adding ice to large bowl with medium sized bowl placed on ice. Set aside. After 30 minutes, add lemon juice to cherries and cook over medium heat, until syrup forms, about 30 minutes. Pour cherries into a sieve over a bowl to separate cooked cherries from cherry sauce. Set aside.

In medium saucepan over medium-low heat, add milk, stirring regularly to prevent scorching. Meanwhile, whisk egg yolks with 1 cup sugar. When milk is heated to 195°, slowly add to whisked eggs and sugar. Transfer mixture back to pan and continue to cook over medium heat and whisk constantly until thickened. If it gets lumpy, just keep whisking. Strain custard into ice bath. Cover with plastic and refrigerate 2 hours.

Once custard has cooled, add heavy whipping cream, cherry sauce, vanilla, and pinch of salt. Whisk until incorporated and smooth. Pour into icecream machine and churn 20 minutes. Add chopped cherries, cooked cherries, and chocolate chips to churn. Return to ice cream maker and churn for another 15 minutes.

Transfer to container, cover with plastic wrap, and freeze 3-4 hours.
