3-4 Cups Whole Milk
1 Cup. Stone Ground Grits
1 Each Jalapeno, finely chopped and seeded
1 Bunch Green Onion
1 Cup. Heavy Cream (up to 1 cup as needed)
1 Stick Butter, unsalted
1 Cup Sharp Cheddar or Mascarpone or Cream Cheese
1/4 Cup Green Onion
3 Tbsp Heavy Cream
Salt and Pepper to taste

In a 4 quart Pot, bring milk to a gentle boil, add the grits. Stir the grits in well. Bring back to a boil, add the Jalapeno then reduce heat to low simmer and cook until the grits are al dente. Turn off heat, add the cheese, heavy cream and green onion.
