4-6 medium to large ripe tomatoes
2 cups coarse bread crumbs (I use a box of Stove Top Savory Herbs Stuffing Mix)
½ cup coarsely chopped Calamata Olives
2 tbsp Capers
2 garlic cloves minced
1 cup grated Parmesan Cheese
Salt & Pepper to taste
3-4 tbsp Extra Virgin Olive Oil

Heat oven to 500º

In a medium bowl mix all ingredients together, add olive oil and stir good. You can add more oil if needed.

Cut tops off tomatoes, use a spoon to remove the inside of the tomatoes. Make sure to remove the seeds between the veins inside the tomatoes.

Spoon in stuffing into each tomato. Tap the tomatoes to help get the stuffing inside. Try not to pack in with the spoon. Place the top of the tomatoes back on the top to cover the stuffing (keeps it from burning the stuffing).

Cook for 5-7 minutes or until skin of tomatoes starts to release.
