5 lb. rump roast
6 garlic cloves, chopped fine
1 t. dried oregano
1 t. dried basil
1 t. dried thyme
1 onion slice
2 c. beef broth
1/2 c. red wine
1/2 c. water
1 t. ground black pepper
1 t. salt
3 red and green bell peppers

Directions:
Preheat oven to 350º.

Mix garlic, oregano, basil, thyme, salt and pepper and rub into beef, massaging thoroughly.

Place the seasoned beef into a large plastic bag and add 1 c. of the broth, wine and onion; let marinate in fridge for 4 hours or overnight.

Place roast in roasting pan and pour marinade over the roast; add remaining broth and water.

Roast with no lid for 2 1/2 hours, turning once during that time.

Remove roast and let stand until cool; reserve juice.

Slice beef thin on meat slicer and place beef in juice.

Cut peppers into slices and saute until done.
