4 lbs pork or beef roast
2½ C black beans
1 Tbsp cumin
1 Tbsp salt
2 Tbsp chili powder
1 or 2 cans green chilies

Directions:
Directions:
To make the beans: simmer dry beans covered in water for 2 mins. Cover and let sit for 1 hour. Add to meat.
Add everything to a crockpot. Cover with 4 +/- cups of water. Cook on high in crockpot. The meat shreds easily when the meat reaches 200 degrees. Skim fat and shred meat. Assemble the chalupa: tortilla, rice (optional), meat, and then add whatever toppings you like on tacos. Pico de gallo, lettuce, cheese, tomatoes, onions, jalapeños, sour cream, etc…
