1 lb kale, raw, washed tough stems removed
3 Tbsp shallots, raw, minced
4 tsp juice lemon, fresh
1 Tbsp honey
1 tsp lemon zest
3/4 tsp kosher salt
1/4 tsp black pepper
2 Tbsp olive oil
1/4 cup cheese - shredded parm, or pecorino romano

Directions:
Directions:
Stack several kale leaves in a pile, roll them up and thinly slice the leaves with knife. Place in bowl and set aside. If that is too fussy - chop very fine. I use Lacinato kale.

Combine shallot, lemon juice, honey, lemon zest, salt and pepper, whisk in oil in a slow stream. Or whisk in fast - you can’t ruin it! Pour vinaigrette over kale, add cheese and toss until mixed. Yields about 3/4 cup per serving.

I don't use exact measurements and it turns out great every time, just season to taste. You can dress the salad early because kale holds up well over time and doesn't wilt as fast as lettuce. Even people who don’t like kale will LOVE this salad. Great for doing ahead.
