Large Boston Butt
BBQ Sauce
Rubs - We use BBQ or Butt Rub and Cajun Seasoning
Liquid Smoke (& injector)

Directions:
Preheat oven to 320º. Wash the Boston Butt. Rub completely with seasonings. The more the better. Inject with Liquid Smoke 3-4 times (in random places, all over)—about 1 tbsp each time. Sear in a pan or on grill. Burning some is okay. Using Heavy Duty (extra long) Aluminum Foil, wrap tightly using 4 to 5 sheets. Put in a pan that has sides. Cook for 5 hours. Cut open after cooking to allow to cool. Take a fork and shred into bite size pieces. Take some of the juice from the foil and pan and mix into the meat for moisture and flavor.
