2 Kielbasa sausage rings, cut into 2-inch pieces
8 potatoes, peeled and quartered
1 onion, cut into chunks
1 (8 ounce) pkg of baby carrots,
4 cloves garlic, crushed
salt & pepper, to taste
3 TBS olive oil

Directions:
Directions:
1) Preheat oven to 350 degrees

2) Mix Kielbasa, potatoes, onion, baby carrots, and garlic in a roasting pan; season with salt and pepper. Drizzle olive oil over the mixture; stir to coat. Cover the baking dish with aluminum foil.

3) Bake in preheated oven of 1-hour. Remove aluminum foil and bake until potatoes are completely cooked, about 30-minutes more.

With just Sean and I in the house, we are not known to plan our menus ahead. Some nights Sean will have dinner ready, and other nights when I get home, he'll ask "what do you think we should do for dinner tonight"? That means either pizza, or that it's time to open the refrigerator, take inventory and then google recipes that include hidden treasures found. Which is how I found this recipe, thus I googled recipes for Kielbasa. Ever since then, it has become a favorite, and I make sure we always have Kielbasa in the refrigerator, and if I'm lucky, Sean will make it, and I will return home from work, and walk into the house, I will be welcomed by the aroma of dinner cooking.
