Cilantro Lime Crema |

Ingredients: 1 C sour cream 2 Tbsp mayo ¼ C cilantro 1 lime, zested and juiced 1 clove garlic, pressed ½ tsp salt

Directions:Put all ingredients into a blender and mix until smooth. |

Spicy Coleslaw |

Ingredients: Bag of coleslaw 2 Roma tomatoes 1 small can of La Costena pickled jalapeños

Directions: |
Directions:Dice the jalapenos (use as many as you desire to preferred spice) and tomatoes. Put coleslaw, jalapenos, and tomatoes in a bowl and mix. Add as much juice from the can of jalapeno as you would like, to be as spicy as you prefer. |

Fish Taco |

Ingredients: Filets of white fish, you will want a real flaky fish (favorite for this recipe is rock fish) Oil Cilantro for topping 2-3 Limes for topping Small corn tortillas

Directions:Prepare fish as you desire. I have baked the fish and I have also fried the fish in a skillet with oil. To assemble the fish taco, fry the tortilla in oil. Top with fish, crema, coleslaw, chopped cilantro, and juice from quarter of a lime. |

Notes: The spicy coleslaw came from a restaurant in Preston. I had eaten there for a work trip and they had this coleslaw w/ chips as an appetizer on the table. I LOVED it. After the trip was over, I couldn't stop thinking about it, so, I called them and asked if they would ever give me their recipe and they did!
