1 cup quick cooking rolled oats
½ cup almond flour
¼ cup honey
1 large egg
¼ cup melted oil
1 tsp vanilla extract
½ tsp baking powder
¼ tsp kosher salt
½ cup sugar free dark chocolate chips, such as Lily's

Directions:
Directions:
1. Preheat your oven to 350 degrees. Line baking sheets with parchment paper

2. In a large bowl, combine the oats, almond flour, baking powder and salt, mix

3. Add the honey, egg, melted coconut oil, vanilla extract and mix well until the ingredients are well combined. Stir in the chocolate chips

4. Drop the dough by level tablespoons onto the prepared baking sheets

5. Bake the cookies for 8-10 minutes or until they are lightly golden brown

6. Let the cookies cool for a few minutes then transfer them to a wire rack to cook completely
