Salsa
Salsa Con Queso
Shredded Romaine Lettuce
Black Olives
Salt

1. Pat chicken breasts dry with paper towel. Coat breasts with olive oil, season with salt and pepper. Air fry at 375 degrees for about 20 minutes. (If the breasts are very large or thick, pound to about an inch thick).

2. While chicken is cooking, shred one cluster of Romaine lettuce and slice as many black olives as you might want for each chicken breast.

3. Put Con Queso and Salsa in microwave and heat for about two minutes.

4. Slice the cooked chicken and place of bed of shredded lettuce. Cover with salsa, then add con queso, and top with the sliced black olives.

This recipe is easily tailored to your personal tastes or kitchen situation. Use two chicken breast tenderloins instead of one chicken breast. (No need to pound, but do reduce the air fryer time). Use your favorite jarred salsa and con queso. Top it with your favorite toppings. I like black olives, but you can do green olives, chopped green peppers, chopped sweet red peppers, pickled jalapeno peppers, etc. Be creative, have fun.

I like to add some sliced tomatoes as a side vegetable. This makes it an attractive plate and a balanced meal.
