Ingredients: 1/2 cup sugar 1/4 cup shortening 1 large egg 1/2 teaspoon vanilla extract 1 cup all purpose flour 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt 2/3 cup mini semi sweet chocolate chips
1. In a large bowl, cream sugar and shortening until light and fluffy. Beat in egg, then and vanilla. Combine the flour, baking soda, baking powder and salt; add to creamed mixture just until combined. Fold in chocolate chips. 2. Spoon about 1 tablespoon of batter into each greased or paper-lined mini-muffin cup. Bake at 375° until a toothpick inserted in the center comes out clean, 10-13 minutes. Cool in pans for 5 minutes before removing to wire racks. Serve warm.

Best to bake at the shorter amount of time. The muffins will still bake a little once you remove from oven. |
