4 eggs, room temperature
3 1/4 cups whole milk
2 cups flour
1 1/2 tsp coarse salt
1/4 tsp pepper
4 Tbsp pan drippings

Directions:
Directions:
Process the eggs, milk, flour, salt, and pepper in a blender until the mixture resembles heavy cream.
Pour a bit of the drippings into the bottom of each popover/muffin cup.
Place the tin into a 400º oven with a baking sheet positioned below to catch any overflow.
Heat for 2 minutes, then quickly pour the batter into each of the cups to about halfway.
Place directly into the oven and bake until puffed and golden brown, about 30 minutes.
Do not open the door or the puddings will deflate.
Serve immediately.
