Ingredients: For the Chicken and Potatoes: 1 lb boneless chicken breasts or thighs 5 red potatoes, diced 2 1/2 Tbsp olive oil 3 tsp Italian seasoning 1 tsp smoked paprika 1/2 tsp kosher salt 1/2 tsp pepper 1 lemon
For the Roasted Green Beans: 3 cups fresh green beans, trimmed and halved salt and pepper 1 tsp olive oil 1/2 tsp garlic powder
For the Topping: 1 cup kalamata olives, chopped zest and juice of 1 lemon 1/2 cup feta cheese

Directions:Line 2 baking sheets with foil or parchment paper. Arrange the chicken in the center of one of the pans and surround with the potatoes. Drizzle with olive oil and toss the potatoes to coat. Sprinkle with the seasonings and toss. Squeeze the lemon over all, cut into slices, and arrange the slices over the baking sheet.
For the Green Beans: Arrange the green beans over the second baking sheet. Drizzle with the olive oil and sprinkle with the seasonings, tossing to coat.
Place the baking sheet of chicken into the oven and bake at 400º for 5 minutes. Add the baking sheet of green beans and bake for 25 minutes.
Mix the chopped olives with the lemon juice and zest.
To serve, divide the potatoes evenly between four plates, then top with the chicken. Add green beans to the side. Top the plate with the chopped olives, then sprinkle with feta. Garnish with a squeeze of lemon and a sprinkle of lemon zest.
