Cannellini beans , 3 cups. Mirepoix
Sorted and soaked overnight
Water to cover. 1 diced carrot
1diced onion
2 diced stalks celery
2 Bay leaves

Olive oil

Savory or Thyme

Balsamic vinegar

Drain the beans ,Pour into pan and cover with water or stock . Add bay leaves , Savory

Immediately reduce to a simmer . Cook until tender , 45 min. To 1 hour . Let cool in

Broth . Remove bay leaves and mirepoix.

Sauté onion , garlic and thyme until translucent .

Add beans . Heat through and adjust seasoning with a splash of balsamic vinegar , salt

And pepper .
