2-4 T butter or oo
1 medium onion, diced
1 medium carrot, diced
1 celery stalk, diced
1 lb + ground beef (or 10 oz ground beef
and 10 Oz ground port
1/2 cup dry red wine
2 T tomato paste
2.1/4 c tomato puree
1/2 t salt
1/2 t pepper
1-2 bay leaves
1/3 cup 2% or whole milk

Directions:
Directions:
Chop veggies finely.
Saute onions, celery and carrot until somewhat soft. Add 1/4 t salt.
Add garlic and saute about one minute.
Increase heat and add meat and pepper; saute until brown, breaking it up until it's all cooked.
Turn heat up and add wine and milk, Simmer and stir until liquid has evaporated.
Decrease heat and add tomatoes (or paste and puree) and bay leaves and 1/4 t salt.
Simmer uncovered for three hours, stirring occasionally. Remove bay leaves and add milk.
Taste for s & p.
