2 bunches of leeks (only use white part, slice very fine)
3 stalks celery, sliced very fine
carrots, diced
3 T. butter

2 1/2 c, potatoes, diced
1 c. water
grated cheese
Add instant potato flakes to thicken
Ham, cubed, or broccoli
cayenne (optional)

Directions:
Directions:
Cook leeks, celery carrots, and butter for 10 min. stirring constantly and add 1 c. of the water (or chicken broth), then add the potatoes, rest of the water, cheese, potato flakes and ham (or broccoli).

Cook another 10 minutes, add the milk and simmer until tender.

Add salt, pepper and cayenne to taste.
