2 pounds chicken thighs or chicken breasts pounded out in order to tenderize.
1 cup flour combined with 1 teaspoon each salt, pepper, garlic powder and onion powder for dredging.
1 egg combined with 1 Tablespoon water
1 panko

1 can diced pineapple drained
1 can mandarin oranges drained
Sauce:
1 1/4 cup pineapple juice (Use the juice from the pineapple and mandarin oranges)
1 cup brown sugar
2 Tablespoons cornstarch
3/4 cup vinegar
1 Tablespoon soy sauce
1/4 teaspoon grated ginger
1 chicken bouillon cube

Directions:
Directions:
1. Dredge the chicken in the flour mixture and then coat in egg mixture finishing up with panko bread crumbs. Fry in a combination of butter and oil until golden on both sides. (Approximately 3 minutes per side) If oil becomes black then toss out and start with fresh butter and oil so as to keep the chicken frying up nice and golden.
Place in 9 x 13 baking pan.
2. Combine all sauce ingredients in sauce pan until thickened. Pour over fried chicken.
3. place the pineapple and oranges on the chicken.
4. Bake for 45 minutes.

Serve over rice
