Ingredients: 2 boneless skinless chicken breasts, sliced cross-wise into thin strips Salt, pepper, paprika and Italian seasoning to taste Olive oil 1/2 C. white wine 1 shallot, diced 1/4 C. sun-dried tomatoes, chopped 3 garlic cloves, sliced 2 C. chicken broth 1 C. heavy cream 1 1/2 C. orzo 2 C. baby spinach, rough chop 1/2 C. grated parmesan cheese

Directions:Season the chicken with salt, pepper, paprika and Italian seasoning. Add a Tbsp. or two of olive oil to a hot skillet. Cook chicken in skillet over medium heat for about 3 minutes per side. Remove chicken from the pan. Deglaze the pan with the white wine. In the same skillet, sauté shallot until translucent. Add garlic, orzo and additional olive oil as needed. Cook the orzo over medium heat for about 2 minutes, until lightly toasted. Add broth and bring to a boil. Reduce heat and simmer for about 5 - 10 minutes, stirring occasionally to avoid sticking. Add spinach and stir on low heat until spinach wilts. Add heavy cream to orzo. Return chicken to skillet and simmer until chicken is completely cooked and sauce is thickened. |

Notes: My granddaughter, Alicia, gave me this recipe. It's a great weeknight meal and is ready to eat in about 30 minutes. Cherry tomatoes may also be added while cooking orzo, if desired.
